The secret are the flours and water. L’ombra uses two different types of Italian flours, “Semolina” flours for pasta from the Southern Italy and “Farina” flours for pasta from the Northern Italy, and sometimes mixing them for certain types of pasta.
The dough is kneaded using as little water as possible, which requires more effort and strength but provides its distinct springy feel and texture.
Also the amount of water and mixture of flours are varied everyday depending on the day’s weather and humidity. The guests are sure to enjoy the freshness and springy feel that cannot be experienced with normal dried pasta.
